HI All!

Of course I have seen all the wonderful meals that have been posted, so here is an area where we can really show off our meals.

Here you can post any and all ideas of you favorite diet or healthy snack.

Please tell all the normal nutritional values and serving sizes. Use Dr Gates' example on the main website if you want to.

Please say why this is a good snack, and which diet it would be used for. Also, if you have any healthy "maintaining" meals for anyone, please post those also.

These meals can be simple or complicated.

This is just one more way we can help each other get to where we want to be.

ONE VERY IMPORTANT NOTE - if you copied it from somewhere else, please provide the person or company credits on the post.

WE don't want to get into trouble for copying material that is not ours.

Anyway, making up our own meals is more fun.

I have been making these for years, and I found the recipe on either kraft.com or jello.com I cant remember....I did substitute skim milk for whole...fat free or reduced calorie graham crackers for regular....etc

1 cup cold skim milk
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding
1-1/2 cups thawed COOL WHIP LITE or fat free Whipped Topping
16 Graham crackers lite...reduced fat etc, broken in half (32 squares)

POUR milk into medium bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. (Mixture will be thick.) Gently stir in whipped topping.
SPOON pudding mixture evenly onto 16 of the graham squares. Top each with second graham square to make sandwich; press together gently to secure. Place in shallow pan; cover with foil.
FREEZE 2 hours or until frozen. Transfer to airtight container. Store in freezer up to 2 weeks.
They taste very similar to ice cream sandwiches. If you can find lite chocolate graham crackers it really tastes like ice cream sandwiches.


Another good variation is leaving out the milk and exchanging the pudding for orange or lemon jello. I guess you could use whatever flavor you prefer. It is a refreshing summer frozen treat. All you do is mix one box of jello directly in the cool whip, spread them on the graham crackers and wrap them individually in plastic wrap. Freeze them, and they are great!:eat

Herb Cream Cheese:
4 oz low-fat cream cheese
2 tbs mineral water
2 tsp lemon juice
Salt and Pepper to taste
1 clove garlic
1/4 bunch fresh italian parsley
veggies or whole wheat bagels, whole wheat bread

Mix together the cream cheese, water, lemon juice, salt and pepper and stir until smooth.
Peel and mince the garlic.
Wash and shake dry parsley. Finely chop the parsley and stir both parsley and garlic into the cream cheese mixture.
Serve as a dip or spread, etc

OK... I gotta take some figure friendly finger food <say that three times fast> to a Christmas get together.... Any Ideas??? We are watching the Carbs, so I am doing a deli meat and cream chees roll up, but want to do another dish too. I'm sure I'm not the only one with this problem! Tis the Season after all!

INGREDIENTS:
2 cups pecan halves
2 T butter
1/4 t cayenne or other hot pepper
artificial sweetener equal to about 3 T sugar
4 t cinnamon
1/2 t salt
PREPARATION:
Use a large skillet. The pecans should be more or less in one layer. Nonstick works well.

Melt the butter in the skillet and add the hot pepper. If you are using liquid artificial sweetener, add it now.

Add pecans to skillet and cook over medium heat.

Low Carb Seven-Layer Mexican Dip
This one is very easy, especially if you can get the pre-made guacomole.

Layer 1: Take one can of refried beans (please look at the label and purchase those with the lowest carbs, highest fiber, and lowest sugar -- I use Old El Paso Traditional Refried Beans.) Cover the bottom of a pie plate or other casserole dish. with the refried beans.

Layer 2: Take premade low sugar guacomole. (Look at the labels.) I buy Avo Classic Guacomole in 4 packs at Costco. I then freeze whatever I don't use immediately so I can always make this dip. Trader Joe's used to have something similar. Cover the refried beans with guacomole for the next layer.

Layer 3: Take low sugar salsa and spread it on as the next layer. I like a very spicy salsa for this layer. (Salsa is usually low carb -- but again, read the labels!)

Layer 4: Take full fat sour cream and carefully spread it on the next layer.

Layer 5: Take shredded cheese and cover the sour cream.

Layer 6: Take shredded lettuce and cover the shredded cheese.

Layer 7: Take diced fresh tomatoes and cover the lettuce.

Layer 8 (optional): Take some onions and sprinkle on top.

Serve with Trader Joe's Low Carb Tortilla Chips or some other brand.
