A friend of my puts mustard in her tuna salad instead of mayo. She says it cuts down on calories. I haven't gotten the nerve to try it yet.

You and my hubby.... he loves hard-boiled eggs in stuff, too. I still can't eat them except whole, by themselves, with salt and sometimes pepper. LOL

i love hard boiled eggs with salt and pepper too (a little texas pete isn't bad either). yum!


Another great addition to tuna salad are raisins. I put raisins on almost all of my salads. i actually mix them into my tuna and chicken salad and it tastes really good.

Seared Tuna Salad with Edamame Hummus
This bright, flavorful hummus is also delightful with endive spears,
cucumber slices or pita points.

Serves 2 with extra hummus
Salad

8 ounces sushi-quality tuna
1/2 cup Soy Ginger Sauce
2 cups mixed greens
Lemon Tahini Dressing
1 carrot, peeled and slivered

Hummus

2 cups shelled Edamame
1 1/2 tablespoons tahini
2 teaspoons fresh-grated ginger
1 teaspoon toasted sesame oil
2 garlic cloves
1/2 teaspoon sea salt (or to taste)
2 tablespoons fresh-squeezed lemon juice
Coat tuna in soy ginger sauce. While tuna is marinating (30 to 45
minutes), prepare hummus. Boil edamame 5 minutes; rinse under cold
water. Reserve 1/2 cups for salad garnish. Place remaining edamame in
food processor and pulse to blend. Add remaining hummus ingredients;
process until smooth and creamy. Set aside. On a hot skillet or
grill, sear tuna 2 to 3 minutes per side or until desired doneness.
Let rest a few minutes then slice. Toss greens with dressing. On
individual salad plates, place mixed greens on one side and a large
dollop of hummus on the other. Top greens with carrot and reserved
edamame. Fan out tuna slices on hummus and drizzle with more soy
ginger sauce and dressing, if desired.

Spinach Souffle (sort of)
Low in calories
Low in carbs

Defrost and drain a package of frozen chopped spinach. Place on a dinner plate, sprinkle with fennel seeds, and cover with a couple of slices of lite American cheese. Microwave until hot, around 1 1/2 minutes.

It's worth the effort.
